I learned to love Greek food when a foreign exchange student from my high school invited me to be a guest in his home in Athens in the shadow of the Parthenon. That's where I learned to love avgolemono soup.

Every week I'm going to select one dish that is the essence of umami. This week it's the Italian gelato at Teatro. This ice cream is made with soy milk yet is as thick and creamy as the dairy version. The same cool deliciousness with no cholesterol! No fat!

Last year I spent 10 days in Japan and had 30 of the finest meals of my life. The Japanese are almost reverential about food, an attitude I share. They say special dishes have the presence of umami. It means "deliciousness."

Every week I'm going to select one dish that is the essence of umami. An ethnic treat. We've already talked about Peruvian chicken, Cubano sandwiches and Mediterranean pizza. Today I want to tell you about salmon katzu, a specialty of The Hawaiian Plantation House in Henderson.

Since we just kicked off football season, we're continuing our culinary quest to understand what football fans eat in their hometowns. Las Vegas is such a melting pot, we can stay in the Valley and still sample home town specialties from coast to coast. We started with the Big Apple, then motored to Motown. Today it's my hometown: Chicago!
